Pork Roast

This braised pork roast recipe is based on one presented by Alton Brown on the program "Good Eats" (S2E13 Pork Fiction).

Rub
- 3/4 cup light brown sugar
- 1/4 cup turbinado sugar
- 2 Tbsp. coarse sea salt
- 2 Tbsp. onion salt
- 2 Tbsp. hot salt
- 1 Tbsp. chili powder
- 1 Tbsp. fresh ground pepper blend
- 1 tsp. Old Bay seasoning
- 1 tsp. cayenne pepper
- 1 tsp. dried onion
- 1 tsp. garlic powder
- 1/2 tsp. mustard powder
- 1/2 tsp. fennel seed
- 1/2 tsp. sesame seed
- 1/2 tsp. dried thyme
Juice
- 1 cup apple juice
- 2 cloves garlic, chopped
- 1 Tbsp. apple cider vinegar
- 1 Tbsp. red wine vinegar
- 1 Tbsp. worcestershire sauce
- 1 Tbsp. honey
- 1/2 tsp. liquid smoke
- 1/4 tsp. hot chili sesame oil
Meat
- Pork tenderloin, 1.5 - 2 lbs.
Lay out aluminum foil, shiny side down.
Shake a layer of rub in the center of the foil.
Place pork in rub and apply more until all surfaces are covered.
you will not need all of the rub but reserve 1 Tbsp. rub for sauce
Wrap up foil and refrigerate at least 1 hour.
Add juice into the foil package. Bake at 225°F for 3 hours.
Sauce
- liquid from roast
- 1 Tbsp. rub
- 1 Tbsp. McCormick GrillMates™ Barbeque seasoning
- sub: mesquite barbecue sauce or diced sundried tomato - 1/2 packet of ketchup if you're desperate
- 1 Tbsp. honey
- 2 tsp. honey mustard
- 1 tsp. butter
- 1/2 tsp. Old Bay seasoning
- optional: few drops liquid smoke
Pour off liquid into a pan and add seasonings. Simmer over medium heat until reduced by half, 15-20 minutes. Pour sauce over roast and broil briefly.
